Recipe: Macarelleta Risotto

Risoto Macarelleta


I don't know if I've ever shared that here at home I have a chef, a.k.a. husband, who runs the kitchen here at home. I get more with the tech part, the house, and eat what he does, which is the part I like best. But I also venture every once in a while in the kitchen, I like to make starters, pasta (my specialty, hahah) and breakfast.

What about the Macarelleta risotto? This recipe was a creation of Rafael and I chose the name. Macarelleta is a beautiful beach in Spain that one day we want to meet.

Now, shall we go to the recipe?

Write down the recipe:

• butter
• Grated onion
• Rice for risotto
• White wine
• Emental Cheese
• 1 lemon zest and juice
• Smoked Salmon
• Vegetable broth
• Thyme
• 1 bay leaf


After sauté the onion in butter add the rice, sauté a little, put a cup of white wine, let it evaporate and will adding the water with vegetable broth and prepare the risotto normally. In the end add the cheese, stir until it melts, correct the salt and pepper, and add the rest of the ingredients, keep stirring but not too much not to shatter the salmon. Once done, add a tablespoon of butter, mix and cover for 5 minutes before serving. ❤

The wine chosen, a very soft Italian that is very comudo be found in the Italian restaurants and bars around the city. Here in supermarkets costs between £5-£7.
